Sébastien Gaudard
Sébastien Gaudard likes to say he was born in the proverbial cabbage patch. And that he decided early on to play with almond paste rather than modelling clay. Also, that he preferred baking cakes over building sandcastles. For very early on, Sébastien Gaudard developed a strong appetite for food along with a good dollop of humour. His innate talent brought him, at the age of 22, to “sweeten” the dishes of French ministers at the Hotel Matignon, HQ of the French government. He then spent formative years at Fauchon, the Paris-basedgourmet food specialist. After serving as pastry chef Pierre Hermé’s assistant, he ultimately replaced his mentor, creating his famous Darjeeling tart. During his stay at Fauchon not even their most longstanding, traditional and sacred specialities such as their éclairs escaped a revamp. “I look for tastes that marry well”, he says. Since 2003, he can be found at Délicabar, a trendy Parisian spot he created with Hélène Samuel, where his pastry-making know-how is free fromconventions allowing for sweet and savoury tastes to comunicate.
First Memory
Unlike for other children, glasses were liberating for me. I was in primary school, in fourth grade, when people thought I was either illiterate, deaf or plain stupid. In fact, my teacher simply found out I was short-sighted. Even if other kids made fun of me, I rapidly turned my glasses into a fashion statement. It’s the age-old story: turning a weakness into a strength.
First Sensation
I wear special glasses : the soft, unbreakable, elastic, easy-to-disassemble
kind! I can’t function without them. They witness what I see all day, all of my accomplishments! As soon as it’s sunny out, I wear tinted lenses. Either blue ones, or fuchsia ones that make everything pretty in pink.
Last Wish
In the future, our sunglasses will have music or tiny screens built into them, that we will switch on or off depending on whether we want to “see” people around us!
